This new fast-casual concept from HAND Hospitality specializes in Nagahama ramen, a style characterized by its very thin noodles and a lighter tonkotsu broth, originally created as an affordable meal for fish market workers in Japan.

The restaurant’s name, Cospa, is derived from the Japanese term for "cost performance," reflecting a commitment to providing value in an era where ramen prices in New York can exceed $20. Cospa aims to return to the roots of ramen culture by offering delicious, affordable options, with a bowl of its original ramen priced at just $9.99. The streamlined model includes walk-in-only seating, QR-code ordering, and a limited menu to keep costs low.

Director Keisuke Oku emphasizes that ramen should be an everyday food, accessible to all. He states, "Ramen has always been an everyday food for ordinary people in Japan. COSPA is not simply about serving inexpensive ramen; it is about returning to the roots of ramen culture, from the price and the food itself to the fast, straightforward style of service."

The menu features a concise selection, including spicy ramen for $10.99, karaage (Japanese fried chicken) for $4.99, and kaedama, an extra serving of noodles, for $2.00. Guests can enhance their meals with toppings like a seasoned soft-boiled egg or extra chashu for a small additional cost. The drink menu includes canned beer, highballs, sake, and sodas, ensuring a complete dining experience.

Despite the low prices, the quality of ingredients is a priority. The broth is made from pork bones, chicken bones, and chicken feet, providing depth without relying on expensive components. Oku notes, "We work carefully at every step to manage costs and pass those savings on to our guests without compromising the flavor or quality of the ramen."

Cospa Ramen will operate daily from 10:30 a.m. to 2 a.m., catering to those seeking a quick meal at any time of day. The tagline, "Like It’s Supposed To Be," encapsulates the vision of providing fast, satisfying, and affordable ramen, echoing the late-night ramen culture of Japan. As Oku highlights, "Nagahama-style ramen is especially well suited to late-night dining because its broth is lighter and less heavy than many other styles of tonkotsu ramen."
