Chef Mason Ho, who previously operated Yume Catering, has transformed his passion for sushi into a brick-and-mortar establishment. Ho's journey began with catering events and pop-ups, where he served sushi from the back of his truck, showcasing his dedication to the craft.

The new restaurant is located in a developing area that is becoming a vibrant community hub, featuring several other dining options and amenities. Ho's vision for Bite is to create a welcoming space where great sushi can be enjoyed without the formality often associated with high-end dining.

Inside, the restaurant boasts an open kitchen and omakase-style counter seating, allowing diners to witness the preparation of their meals. The menu focuses on nigiri and a selection of Japanese-inspired tapas, steering clear of traditional California rolls, which Ho avoids due to his avocado allergy. Instead, diners can expect unique offerings like tsukune chicken meatballs and bacon-wrapped scallion skewers, which have quickly become favorites.

One highlight is the Bite Set, priced at $30, which includes a variety of dishes such as edamame, chef’s choice nigiri, and skewers. The spicy edamame is particularly noteworthy for its balance of sweetness and heat, while the atsu-age tofu skewer is a delightful surprise for tofu skeptics.

Ho emphasizes that he is not pursuing Michelin stars but rather aims to be a reliable neighborhood sushi spot. The atmosphere at Bite is relaxed, with no dress code and no pressure to make dining feel like a special occasion. This approach resonates with the community, as the restaurant has already begun to attract a steady flow of patrons.

Bite Sushi & Tapas remains in its soft opening phase, a situation Ho humorously attributes to financial constraints. Despite this, the restaurant has quickly established itself as a go-to destination for sushi lovers in Dallas, proving that there is indeed room for another sushi restaurant in the city.

Bite Sushi & Tapas is located at 900 E. Clarendon Dr. and is open Tuesday through Sunday, offering lunch and dinner service.
