Dashi Ice Cream: A Unique Japanese Treat from Niigata
Dashi, a stock made from kombu (kelp) and katsuobushi (bonito flakes), is a cornerstone of Japanese cooking, commonly found in dishes like miso soup and various noodle broths. However, it is rarely seen in desserts, making the introduction of Dashi Soft Serve Ice Cream at On the Umami in Niigata Prefecture particularly intriguing.
While exploring the CoCoLo shopping center near Niigata Station, our reporter Udonko stumbled upon this unique offering. Having previously enjoyed dashi from On the Umami, Udonko was curious to try the ice cream, especially after seeing the promotional poster that highlighted its blend of three types of kombu dashi. At 400 yen, it was a bit pricier than typical soft serve, but the novelty of dashi ice cream was too tempting to resist.

Though On the Umami lacks an eat-in space, Udonko found a nearby rest area to conduct her taste test. The Dashi Soft Serve was visually appealing, boasting a bright white color and a smooth texture, resembling traditional ice cream. The anticipation built as she prepared to taste it, wondering whether it would be sweet, salty, or something entirely different.
Upon her first bite, Udonko was pleasantly surprised by the creamy milk flavor, which was complemented by the use of Guernsey cow milk sourced from a small herd in Nagaoka, Niigata. Known for its rich taste and clean finish, this milk enhanced the overall flavor profile of the ice cream. The dashi flavor emerged gradually, initially subtle but becoming more pronounced as the ice cream melted. Udonko noted that the dashi's saltiness skillfully accentuated the sweetness of the cream without overpowering it, making for a delightful balance.
This innovative ice cream not only showcases the versatility of dashi but also highlights the creativity of Japanese cuisine, inviting adventurous eaters to experience a new dimension of flavor in a familiar dessert.
