Emma Chung Shares Secrets to Simplifying Chinese Cooking in New Cookbook

Emma Chung Shares Secrets to Simplifying Chinese Cooking in New Cookbook

Emma Chung, a Hong Kong-based chef and TikTok sensation, has gained popularity for her simple yet flavorful Chinese recipes, particularly her spring onion oil noodles. With her new cookbook, 'Easy Chinese Food Anyone Can Make,' she aims to demystify Chinese home cooking and encourage more people to cook at home instead of relying on takeout.

Chung, who has a rich culinary background, having worked as a recipe developer and taught at London's School of Wok, emphasizes that Chinese cooking can be straightforward and enjoyable. Her cookbook features easy weeknight meals, from ketchup prawns to classic dishes like sweet and sour pork and beef chow fun, as well as desserts like sticky mango rice.

For those new to Chinese cuisine, Chung recommends starting with a few essential ingredients: light soy sauce, dark soy sauce, sesame oil, and oyster sauce (or mushroom sauce for a vegetarian option). These staples can transform simple dishes, making them taste fresher and healthier than pre-packaged alternatives. "If you just had those basic ingredients yourself, it’s going to taste a lot better," she notes.

Chung highlights fried rice as an excellent dish for beginners, as it can utilize leftover ingredients and is quick to prepare. She advises that the key to great fried rice lies in the cooking technique: the pan should be very hot, and it’s important not to stir the rice too much, as this can lead to a mushy texture. Instead, letting the rice cook undisturbed allows it to develop a better consistency.

Dumplings are another focus of Chung's teachings. She reassures home cooks that making dumplings is easier than it seems. The most basic dumplings, she explains, require a simple fold, unlike the intricate pleats often seen in restaurants. Chung encourages cooks to taste their filling before sealing the dumplings to ensure proper seasoning.

With her engaging approach and practical advice, Emma Chung is on a mission to make Chinese cooking accessible and enjoyable for everyone, proving that with the right ingredients and techniques, anyone can create delicious Chinese dishes at home.
