Osaka Students Create Innovative Plant-Based Shrimp Miso Ramen
Students at Osaka Metropolitan University have made waves in the culinary world with their creation of a 100% plant-based creamy shrimp miso ramen. This innovative dish successfully replicates the rich flavor of traditional seafood ramen without utilizing any shrimp or meat, showcasing a future where individuals with various dietary restrictions can enjoy similar meals.
The ramen was presented during an open campus event at the university's Morinomiya campus in Joto Ward, Osaka, where students from the Department of Nutrition proudly showcased their culinary achievement. Using soy-based minced protein and a selection of other plant-derived ingredients, the students have managed to recreate the distinctive taste and richness associated with shrimp miso ramen, all while adhering to a completely animal-free recipe.

Visitors, including high school students, were pleasantly surprised by the results. One attendee remarked, "It tastes just like real shrimp," while another expressed enthusiasm about the prospect of studying at the university, inspired by the delicious offering. The project was developed in collaboration with Fuji Oil, a company specializing in plant-based food technologies, which provided its proprietary Miradashi technology. This innovative approach allows for the creation of savory umami flavors typically found in seafood and meat, using only plant-derived ingredients.
Fostering Inclusivity Through Innovative Culinary Solutions
The students hope that their ramen will contribute to a more inclusive society where people can share dining experiences regardless of dietary restrictions, including religious rules, food allergies, or vegan lifestyles. This initiative is part of broader efforts to revitalize Osaka's eastern districts, known locally as the Higashi area, where redevelopment projects are fostering new opportunities for collaboration between academia and industry.
By merging academic research, food technology, and local industry, this project exemplifies how innovative food development can play a role in urban revitalization. As Osaka aims to strengthen its position as an international city welcoming diverse cultural backgrounds, food emerges as a vital medium for creating communities where everyone can participate. The success of this plant-based ramen could pave the way for more inclusive culinary innovations in the future.
